Sauce
Start by grating the medium pre-cooked potatoes using a fine grater and transfer them to a large bowl.
Add the shredded chicken breasts and the egg.
Season with the salt, the black pepper, the garlic powder, the onion powder, the chimichurri and mix everything very well to combine.
Add the shredded mozzarella cheese and mix once more.
Next, take a handful of this mixture in your hands and shape it into a small patty.
Repeat this process with the entire mixture and set aside.
Now, bread all the patties by first dipping them in beaten eggs, then coat them in panko breadcrumb and set them aside.
In a food processor, add the sprig of mint, the mayonnaise, the heavy cream, the honey, the olive oil, the black pepper, the garlic powder and blend everything very well until smooth and well combined.
Stop blending and set it aside.
In a large skillet over medium to low heat, add vegetable oil and let it heat up.
Add the patties we prepared and let them fry until golden brown.
Serve with the sauce we prepared.
