
Start by grating the mozzarella cheese using the coarse side of the grater.
Next, transfer all this cheese to a mixer, add the eggs and blend everything very well until combined.
In a large bowl, add the tapioca flour, the butter, the cheese mixture we prepared, the coconut milk and mix everything very well until it forms a smooth and even dough.
If you like, you can also add a pinch of salt.
Next, take a portion of this dough in your hands and shape it into a biscuit.
Repeat this process with the rest of the dough.
After doing that, transfer these biscuits to the basket of an Air Fryer.
Place it in the fryer, set it to 200° C (400° F) and fry for 10 minutes.
Serve.
