Start by cutting the potatoes into small dices and cook them over medium heat.
Chop the onion into small dices.
After cooking the potatoes, place the butter in a skillet and let it melt. Add the potatoes and fry over medium heat.
Add the onion and sauté, add the diced red pepper and sauté again.
Now, add the sweet paprika, the crushed garlic cloves and the salt, mix well and add the potato to one side of the skillet.
Crack the two eggs on the other side of the skillet and season with a pinch of salt and sweet paprika, cover the pan and let it all cook for 2 to 3 minutes.
Sprinkle chives to taste.
Serve.
