Start by putting 1 head of broccoli in a saucepan over medium heat filled with boiling water, and let it cook for 10 minutes.
Once you’ve done that, remove it from the water and cut it into florets.
Transfer these florets to a large bowl, and using a fork, mash them well until it forms a puree.
Add the breadcrumbs and the salt, mix all the ingredients together until combined.
Get a portion of this mixture in your hands and shape it into a ball, open a hole in the center of the ball and fill it with 25g of cubed mozzarella cheese, then close it by shaping it into a burger patty.
Next, in a skillet over medium-low heat, add 1 drizzle of olive oil and the broccoli patties, fry them on both sides until golden brown.
Serve.
