Sauce
Start by peeling the potatoes and cut them into strips.
Transfer them to a medium bowl, add enough cold water to cover them, mix and let them soak for 10 minutes.
After this indicated time, drain all the water from the potatoes, add one drizzle of olive oil, the wheat flour, the sweet paprika, the salt and mix until incorporated.
Now, in a baking sheet lined with non-stick baking paper, add the potatoes we prepared.
Take this baking sheet to a preheated oven at 180°C (350°F) and bake for 20 minutes.
In a bowl, add the milk, the butter, the mozzarella, microwave for 30 seconds and mix very well to melt the butter and the cheese.
Once the fries have baked through, add one pinch of salt, mix until incorporated and transfer them to a nice plate.
Serve with the sauce we made.
