Boil the potatoes and cut them lengthwise just above halfway. Scoop out the inside of the potatoes and mash them in a separate bowl, set aside.
Fry the bacon in its own grease, add the chopped onion and sauté lightly. Add the garlic and sauté until golden, add the mashed potatoes and mix well, add parsley and salt to taste, stir.
Turn off the heat and add the creamy cheese spread, mix well.
Stuff the potatoes with this filling and top them with grated mozzarella chese and oregano to taste. Repeat this process with all potatoes.
Bake in a preheated oven at 180°C (356°F) until the cheese melts.
