Bacon Loin Wraps

Start by arranging the slices of bacon in the form of an “X”, just like shown in the video.Now, slice the pork loin into thin steaks, cover them with a plastic bag and pound them well using a meat mallet.Top each “X” shaped bacon slices with one of these steaks and set aside one more time.Now, in a skillet, add one drizzle of oil, add the onion chopped into small dices, the red chili pepper chopped into round slices, the diced mushrooms, and stir-fry until slightly golden brown.Once you’ve done that, squeeze the lemon juice and place the lemon on the skillet, with the pulp facing down, stir, cover the skillet and let it all cook for 10 minutes.After this indicated time, remove the lemon, season with the salt, the black pepper and stir once again.Transfer all of it to a bowl, add the grated parmesan cheese, give it a mix and set aside.Now, to assemble, top each loin steak with ½ tablespoon of the mushroom filling we made.Wrap it all up, just like shown in the video, and use one onion slice to seal the top of each wrap.Repeat this process until you’ve used up all the meat.Transfer all the wraps to a baking sheet lined with nonstick baking paper.Take to a preheated oven at 180°C (356°F) and bake for 40 minutes.Serve.

  • 24 Slices of Bacon
  • 1kg of Pork Loin
  • 1 Medium Onion
  • 1 Red Chili Pepper
  • 200g of Mushrooms
  • Juice of ½ lemon
  • 1 Teaspoon of Salt
  • 1 Generous Pinch of Black Pepper
  • 100g Grated of Parmesan Cheese

Now, slice the pork loin into thin steaks, cover them with a plastic bag and pound them well using a meat mallet. 

Top each “X” shaped bacon slices with one of these steaks and set aside one more time.

Now, in a skillet, add one drizzle of oil, add the onion chopped into small dices, the red chili pepper chopped into round slices, the diced mushrooms, and stir-fry until slightly golden brown.
