
Sauce
In a large skillet over medium to low heat filled with hot vegetable oil, add the sliced zucchinis and fry them until they are lightly golden brown.
Remove them from the oil and set them aside on a plate lined with paper towels.
In a large bowl, add the ground beef.
Season with the salt, a pinch of black pepper, the garlic powder, the onion powder, the sweet paprika, the chimichurri, a drizzle of olive oil, mix everything very well to combine and set aside.
In a small bowl, add the tomato sauce, the salt, a pinch of black pepper and mix everything to combine.
Then add a handful of the seasoned meat on top of one of the fried zucchini slices and roll it up.
Repeat this process with all the zucchini and the meat.
Transfer everything to a baking dish and add the sauce we prepared.
Take to a preheated oven at 180° C (350° F) and bake for 40 minutes.
After this time has passed, add the shredded mozzarella cheese and the grated Parmesan cheese.
Put it back in the oven and bake until the cheese is golden and bubbly.
Serve.
