
Start by slicing the medium Italian zucchinis; to do this, cut off the ends and cut them into thin slices using a vegetable slicer.
Then grease a rectangular baking dish with the unsalted butter softened to room temperature.
Add the zucchini slices covering the bottom of the dish and set aside.
Then cut the chicken breasts into cubes and transfer them to a large bowl.
Add the eggs, the unsweetened natural yogurt, the salt, the black pepper, the shredded mozzarella cheese and mix everything thoroughly until well combined.
Pour this entire mixture into the baking dish with the zucchini.
Add the onion sliced into rings, the tomato also sliced into rounds, the grated Parmesan cheese and close everything by wrapping it with the zucchini slices.
Take to a preheated oven at 180° C (350° F) and bake for 45 minutes.
Serve.
