3 Slices of Bacon
4 Sprigs of Parsley
3 Red Peppers
Pinch of Salt
Generous Pinch of Black Pepper
100g of Mozzarella Cheese
Cut the onion into dices and set aside.
Also cut the tomato and the bacon into dices.
Finely chop the sprigs of parsley.
Remove the top of the peppers then remove all their core.
Stuff each pepper with two eggs.
Put some diced onion in each pepper, the diced tomato, the diced bacon, and season them with the salt, the black pepper and the parsley, mix all the ingredients very well.
Next, add a drizzle of olive oil into a baking dish, add the peppers and take them to a preheated oven at 180°C (356°F), let them bake for 30 minutes. Baking time may vary depending on the power of your oven.
After this indicated baking time, top the peppers with the grated mozzarella cheese.
Take them back to the oven at 180°C (356°F) and let them bake for another 10 minutes.
