Start by cutting a peeled and seeded pumpkin into slices and set aside.
In a small bowl, add the honey, the white vinegar, the black pepper, the salt, the dried thyme, the dried rosemary, parsley to taste and mix everything very well.
In a large baking tray, add a drizzle of olive oil and spread it with a brush.
Add all the pumpkin slices and brush them with the seasoning mixture we prepared.
Then, turn them all over and brush them with the seasoning mixture on the other side.
Take to a preheated oven at 180° C (350° F) and roast for 25 minutes.
Serve.
