1 Cup (200ml) of Rice
1 Tablespoon of Olive Oil or Oil
Water to Cover the Rice
1 ½ Chopped Carrots
1 Chopped Potato
½ Chopped Tomato
100g of Peas
1 Can of Tuna
½ Can of Sweet Corn
40g of Olives
Sauce
Cook the rice in oil or olive oil then add enough water to cover it.
Chop the carrots into small dices, do the same to the potato and the tomato. Set aside.
In a pan, place the carrots and the fresh peas, add enough water to cover them and cook over medium heat for 10 minutes. Add the potatoes and cook for another 5 minutes.
After this indicated cooking time, drain all the water from the pan and add the tomato, the sweet corn, the olives, the tuna and finally the cooked rice, mix it all together very well and set aside.
In a bowl, place the mayonnaise, the olive oil, the salt, the black pepper, the milk and the squeezed lemon, mix very well into a sauce, pour it into the rice and mix very well again.
Serve.
