Potatoes Stuffed with Beef and Cheese

Start by adding the halved potatoes with the insides scooped out into a large pot with hot vegetable oil over medium heat, leaving only the peels.Fry them until golden brown then set aside.In a large skillet over medium to low heat, add a drizzle of olive oil.Add the onion chopped into small cubes, the crushed cloves of garlic and sauté until lightly golden brown.Next, add the ground beef and continue sautéing until all the liquid from the meat has evaporated.Add the tomatoes cut into cubes.Season with the salt, the black pepper, the smoked paprika, the chimichurri, the garlic powder, the onion powder and sauté until the tomatoes are completely broken down.Next, place the fried potatoes in a large baking tray lined with non-stick parchment paper.Add 20g of grated cheddar cheese to each potato then stuff them with the meat we prepared.Then add another 20g of grated cheddar cheese on top of each one.Place everything in a preheated oven at 200°C (400°F) and bake for 10 minutes.To finish, add bacon bits to taste and green onions to taste.Serve.

  • 3 Potatoes

  • 2 Tomatoes
  • 1 Tablespoon of Salt
  • 1 Pinch of Black Pepper
  • 1 Teaspoon of Smoked Paprika
  • 1 Teaspoon of Chimichurri
  • 1 Teaspoon of Garlic Powder
  • 1 Teaspoon of Onion Powder
  • 240g of Grated Cheddar Cheese
  • Bacon Bits to Taste
  • Green Onions to Taste

Fry them until golden brown then set aside.
