Peel 500g of potatoes and wash them well, slice them into large cubes and set them aside in a bowl with water.
Into a saucepan over medium heat, add the water, the potatoes and let it cook for about 20 to 25 minutes.
Transfer the potatoes to a bowl and mash them well with a fork into mashed potatoes.
Add a pinch of black pepper and oregano, chopped parsley to taste, the grated cheese, the corn starch and finally, add the salt.
Mix very well until a dough is formed.
If the dough is still sticking to your hands, add 2 more tablespoons of corn starch.
Get a piece of dough and roll it into a stick.
Repeat this process until you've used up all the dough.
Set aside.
Grease a baking tray with a drizzle of oil or line it with parchment paper.
Transfer all the potato sticks to the baking tray and brush them with some oil to prevent them from drying out while baking.
Bake in a preheated oven at 180°C (356°F) for 30 to 40 minutes.
Serve.
