Start by crushing a garlic and mixing it in the olive oil, then brush the mixture over the smoked sausage, spreading it very well. Once you’ve done that, set aside.
Remove the excess fat from the meat and poke a hole right in the center of it, making sure it goes through the whole steak, from one end to the other.
Get the sausage and stick it into the hole we’ve made in the meat, crossing the whole meat.
If the sausage doesn’t fit completely, cut the excess out of both ends.
Now, season the meat with the garlic cloves, the sweet paprika, add black pepper to taste and the salt. Rub spices all over the meat, spreading them very well.
Once you’ve done that, poke some holes all over the meat to make sure spices get into it then set aside.
Into a pressure cooker, add a drizzle of olive oil. When it is hot enough, add the meat and let it sear for 2 minutes. After that time, flip it over and sear the other side for another 2 minutes. Repeat this process until you’ve seared the whole meat.
Then add the onion chopped into thin strips and stir well until it gets slightly brown.
Add the bay leaves, the tomato sauce, chives & parsley to taste and water until it nearly reaches the meat level. Add 1 teaspoon of salt, mix it all together very well.
Close the pressure cooker, and once it has reached pressure, let it cook for 45 minutes.
After this indicated time, release pressure and check if the meat is tender. If it’s still hard, let it cook for another 10 minutes.
When the meat is tender, add the peeled potatoes cut in half, close the pressure cooker, and let it all cook for another 10 minutes.
After this indicated time, turn off the heat and serve.
