For Breading
Cut off the crusts of 4 slices of bread loaf. Then cut these slices into smaller pieces. Process these slices into thick crumbs in a food processor.
If you don't have a food processor, you can do it in a blender.
Transfer the bread crumbs to a bowl and set aside.
Cut the chicken into cubes, they don't have to bee too small. Put these chicken dices in the food processor, add the garlic, cumin powder, sweet paprika and mixed spices, add the bread crumbs and process very well until it all combines and a smooth mixture is formed.
Place this mixture on a cutting board and add 2 drizzles of olive oil or oil. Mix well and flatten this mixture until about 1-finger thick.
Cut this mixture into small pieces, shaping them into nuggets.
Get these pieces and shape them by hand, rounding the sides.
Into a bowl, add the eggs, salt and milk, mix well.
Into another bowl, add the breadcrumbs and the saffron, mix well too.
Dip the nuggets in the egg mixture then coat them in the breadcrumbs.
Fry them and serve.
