Dressing
Start by slicing the peeled carrots into thin long strips using a vegetable peeler.
Transfer all these carrots to a medium baking dish,
Add enough cold water to cover everything, the ice cubes, the salt and mix everything very well to combine.
Cover the baking dish with plastic wrap and leave it all to soak in this cold water for 30 minutes.
In a small bowl, add the white vinegar, the vegetable oil, the juice of a lemon, the soy sauce, the honey, parsley to taste and mix.
Then, add the salt, a generous pinch of black pepper and mix everything again to combine.
After the carrots have soaked for the indicated time, drain all the water and transfer the carrots to a nice salad bowl.
Add the dressing we prepared and mix everything very well to combine.
Serve.
