Start by cutting the sweet potatoes into round slices and set aside.
In a skillet over medium heat, add the butter and stir until fully melted.
Next, add the wheat flour and stir until it has dissolved into this mixture.
Add the milk and stir until creamy.
Next, add the table cream and stir.
Add the salt, one pinch of black pepper and stir again until combined.
Now, transfer the potatoes to a large baking dish, pour the creamy sauce we made all over the potatoes and cover the dish with aluminum paper.
Take it to a preheated oven at 180°C (350°F) and bake for 45 minutes.
After this indicated time, add the grated mozzarella.
Take the dish back to the oven and let it all bake until the mozzarella has fully melted.
Finish by sprinkling chives and parsley to taste.
Serve.
