Banana Syrup

Start by peeling the bananas – for this recipe, we’ll be using only the peels, but you can use the bananas to make a dessert, for example.In a bowl, add the water, the baking soda and the banana peels, mix and let them soak for 5 minutes.Now transfer the peels to a saucepan, add enough water to fully cover them, turn on the heat and bring to a boil.When that happens, turn off the heat, transfer it all to a large bowl, cover it and let it all rest for 24 hours.After this indicated time, pass all this mixture through a sieve and pour it in a saucepan.Add the coconut sugar and bring to a boil until it starts to reduce.Keep stirring until it turns into a thick syrup.After that, turn off the heat and transfer the syrup to nice airtight glass jars.Serve.

  • 1 Liter of Water at Room Temperature
  • 1 Teaspoon of Baking Soda
  • 700g of Coconut Sugar
