Chop the onion into thin strips and transfer them to a baking tray greased with some olive oil, set aside.
Cut the potatoes into thin slices and transfer them to the tray, placing them on top of the onions, season them with some salt, a generous pinch of black pepper and a drizzle of olive oil, set aside.
Cut the chicken breasts into dices and transfer them to a bowl, season with salt, black pepper and red chili to taste, mix well.
Transfer the chicken to the tray with the potatoes and set aside.
Into another bowl, add the eggs, the table cream and add a pinch of salt, of curry powder and the chimichurri, beat and mix very well.
Pour all this mixture into the baking tray, spreading it all over the chicken, and cover this tray with some aluminum foil.
Take it to a preheated oven at 200°C (392°F) for about 40 minutes. Cooking time may vary depending on the power of your oven.
Meanwhile, chop the tomato into thin round slices.
After the indicated time, add the grated mozzarella cheese and the tomato slices over the chicken.
Finally, take it back to the oven for 10 minutes.
Serve.
