Start by chopping the precooked Tuscan sausages into thin round slices and set them aside.
Into a saucepan, add a drizzle of olive oil and the sausages, stir until nicely brown, remove them from the saucepan and drain them on paper towel.
Once you’ve done that, into the same saucepan, add the onion chopped into dices and the chopped garlic cloves, stir until golden brown.
Add the red and green peppers chopped into dices and chives to taste, stir.
Now add the white rice, the sweet paprika and the curry powder, stir again.
Add the water and the canned vegetable mix, stir
Finally, add the salt and stir again.
Let it all cook for 15 minutes or until the water fully evaporates.
After that, add the sausage and mix to incorporate into the rice.
Top with parsley to taste.
Serve.
