150g of Refined Sugar
10g of Vanilla Sugar
40g of Corn Starch
500ml of Heavy Cream
Chocolate Shavings, to Taste
Start by cutting the lemons in half, squeeze out all their juice, and transfer all this juice to a large saucepan, by passing it through a sieve.
Add the refined sugar and the vanilla sugar, mix very well until fully dissolved.
Add the corn starch and mix again.
Then turn on the heat to medium-low and stir until thickened.
Transfer all this mixture to a medium bowl, cover with a plastic bag touching the mixture, and let it cool until it reaches room temperature.
Meanwhile, in a bowl, add the heavy cream, and beat with an electric mixer until stiff peaks form.
Once the lemon cream has cooled, beat again with the electric mixer until it reaches creamy consistency.
Then transfer this lemon cream to the bowl with the whipped cream and mix until combined.
Now, transfer this mousse to nice serving bowls.
Use a piping bag with nozzles to do so, if you prefer.
Top the dessert with chocolate shavings to taste.
