Start by cutting the potatoes into thick slices then into sticks.
Transfer them to a medium bowl, add the salt, the granulated sugar, enough water to cover everything, some ice cubes and mix.
Next, using a colander, drain all the water from the potatoes and set aside.
Now, in a large bowl, add the wheat flour, the cornstarch and mix.
Cover the drained potatoes with this mixture and bread them well.
Then, using a sieve, remove excess flour and starch.
In a large skillet over medium heat, add enough vegetable oil to cover the bottom and let it heat up.
When this oil is hot enough, add the potatoes we have prepared earlier and fry them until golden.
Remove them from the oil and soak up the excess fat on a plate lined with paper towels.
Serve with a dip of your choice
