Crispy Eggplant

Cut the eggplant into round slices, about 1-finger thick. Transfer the eggplant to a bowl and season with salt, sweet or spicy paprika, a pinch of black pepper, oregano and two cloves of garlic well crushed.Spread the seasoning on all the eggplant slices.In another bowl, place two eggs, salt, two tablespoons of water and two tablespoons of white vinegar, mix it all together very well until combined.In another bowl, place the wheat flour, sweet or spicy paprika and salt, mix well.And in another bowl add the Panko flour.Get a slice of eggplant and coat it in the wheat flour, dip it in the eggs and finally coat it in the Panko flour. Repeat this process with all the slices.Fry the eggplants over medium heat until golden.Serve.

  • ½ Teaspoon of Sweet Paprika
  • 1 Cup (240ml) of Panko Flour or Breadcrumbs
  • Oil for Frying
