Cut off the ends of a sweet potato and peel it, cut it into smaller pieces, preferably dices.
Transfer to a pressure cooker and add enough water to fully cover the dices.
Close the pan and let it cook for 15 minutes after it reaches pressure.
Transfer the potatoes to a bowl and mash them with a fork, add the two eggs and mix it all together very well. Add a spoon of honey and mix well.
In a skillet over low-medium heat, spread some butter or a drizzle of oil. Transfer some of the potato mixture to the skillet and shape it into a circle, cook until golden brown.
Flip the pancake so that both sides are well browned.
Repeat this process with all the mixture.
Serve.
