In a large skillet filled with hot oil, add one onion chopped into round slices and the eggs, let it all fry for 5 minutes.
Season with one pinch of salt, one pinch of black pepper, stir until incorporated.
Add the sweet corn and stir for another 5 minutes.
Gradually add the manioc flour and keep stirring until combined.
Turn off the heat, add parsley to taste and stir once again.
Serve.
