Mashed Potatoes
Sauce
In a food processor, start by adding the onion chopped into smaller pieces, the carrot sliced into rounds, the cloves of garlic, the parsley and blend everything very well until combined.
In a large bowl, add the ground beef, the egg and the breadcrumbs.
Season with the salt, the black pepper, the sweet paprika and the chimichurri.
Add the mixture we prepared earlier and mix all the ingredients very well until combined.
Next, take a handful of this mixture and shape it into a meatball.
Repeat this process with all the meat.
In a large pot over medium to low heat filled with boiling water, add the meatballs and let them cook for 5 minutes.
Remove them from the pot and set them aside.
Next, in a large pot, add the potatoes chopped into smaller pieces and enough water to cover everything.
Turn on the heat to medium-low and cook for 15 minutes.
Drain all the water and transfer the potatoes to a large bowl.
Add the butter and mash everything well until it turns into a puree.
Then, add the salt, the black pepper, parsley to taste and mix everything very well to combine.
In a small bowl, add the tomato paste and the olive oil.
Season with the salt, the oregano and mix.
In a medium baking dish, add the mashed potatoes and spread it out evenly.
Add the sauce, spread it out and cover everything with the cooked meatballs.
Take it to a preheated oven at 180° C (350° F) and bake for 35 minutes.
After this time has passed, add the grated mozzarella cheese, place the baking dish back in the oven and let it all bake until the cheese is melted and golden brown.
Serve.
