Start by cutting the chicken breasts in half then transfer them to a cutting board, cover with plastic film and gently pound.
Season them with one pinch of salt and black pepper, set aside.
Grate the potatoes and squeeze them well to remove all of the liquid.
Into a bowl, add the cheese, the egg, the grated potatoes, the salt and the black pepper, mix all the ingredients very well.
Now get put ½ of this mixture over one of the halves of chicken breast, spread well and cover it with another half of chicken.
Repeat this process with the other half and with the rest of the chicken.
On a plate, add the breadcrumbs and the parmesan cheese, mix well and coat the stuffed chicken breasts very well in this mixture.
Next, wrap them in aluminum foil.
Finally, transfer to a large baking sheet, take to a preheated oven at 180°C (356°F) and let it all bake for 40 minutes.
Serve.
