
Start by placing the potatoes into a large pot and adding enough water to cover everything.
Turn on the heat to medium and let them cook for 15 minutes.
After this time has passed, remove them from the hot water and transfer them to a large bowl.
Add cold water until all of them are covered and let them rest for 5 minutes.
After this time has passed, cut the top off each potato and using a spoon, scoop out the center.
Then cut the onion into small cubes and cut the ham into small squares.
In a large skillet over medium to low heat add a drizzle of olive oil, the onion we cut, the ham, a pinch of black pepper and sauté everything very well until lightly golden brown.
In a large baking tray place the potatoes we prepared and season them with salt to taste.
Next, fill each one with one tablespoon of the sautéed mixture we prepared, one egg and mozzarella cheese to taste.
Take to a preheated oven at 180° C (350° F) and bake for 25 minutes.
Serve.
