Start by cutting the piece of pork loin, butterflying it into a flat sheet.
Next, cover it with plastic wrap and using a meat mallet pound it very well.
To season it, add a pinch of salt, a pinch of black pepper and set it aside.
In a large skillet over medium to low heat, add a drizzle of olive oil.
Add the garlic cloves cut into small cubes, rosemary to taste, the zest of one lemon and sauté until golden brown.
In a mixer, add the smoked bacon, the sautéed mixture we prepared, the chili flakes and blend everything very well until combined.
Then spread this bacon paste over the pork loin we prepared.
Next, roll it up and secure it with barbecue skewers.
Season it with a pinch of salt, a pinch of black pepper, turn it over and repeat the seasoning on the other side.
Transfer it to a large skillet with hot vegetable oil and fry it until golden brown.
When that happens, remove it from the hot oil, transfer it to the oven rack and brush barbecue sauce all over the top.
Take it to a preheated oven at 180 ° C (350 ° F) and let it bake for 50 minutes.
Serve.
