
Start by squeezing the juice of the oranges into a blender and add the medium onions chopped into smaller pieces.
Add the peeled garlic cloves, the brown sugar, the soy sauce, the apple cider vinegar, the olive oil, the chimichurri, the salt and blend everything thoroughly.
Next, place the piece of pork in a plastic bag and pierce it a few times with the help of a knife.
Add the entire mixture we prepared, seal the bag and let everything marinate in the refrigerator for at least 2 hours.
After this time has passed, add the onions sliced into rings to a large baking tray, spreading them evenly to form a bed, covering the whole bottom.
Add the meat and drizzle it with the marinade juices.
Next, sprinkle the garlic powder and the thyme all over it.
Cover the baking tray with the sheet of aluminum foil.
Take to a preheated oven at 180° C (350° F) and roast for 2 and a half hours.
After this time has passed, remove the aluminum foil and baste the entire piece of meat with the juices.
Return it to an oven preheated at 200° C (400° F) and roast for an additional 30 minutes.
Serve.
