Cut the carrot into round slices and transfer them to a large saucepan.
Add a whole medium onion, the mixed peppercorns, the bay leaves and add enough water to cover all the ingredients.
Turn the heat to medium and let it all cook for 20 minutes.
Next, cut the onion into small cubes.
Now, in a large skillet over medium-low heat, add one drizzle of olive oil.
Add the onion cubes, the grated carrot and stir for 2 minutes.
Next, add the ground beef and stir until slightly golden brown.
Now, add the crushed garlic cloves, the tomato paste, stir and let it all cook for another 5 minutes then turn off the heat and set aside.
Once the vegetables have cooked through, remove them all from the saucepan using a sieve.
In the same saucepan, add the potatoes chopped into cubes, stir and let them cook for 10 minutes.
After this time has passed, add all the meat we prepared earlier.
Season with the salt, one pinch of black pepper, parsley to taste, stir, and let everything cook for another 3 minutes.
Serve.
