Sauce
Into a bowl, add the ground beef, eggs, chopped chives, salt, beef stock powder, black pepper, and the grated medium onion. Now using your hands, mix it all together very well until all ingredients combine.
Add the breadcrumbs and mix it all again very well.
Once that's done, with a tablespoon, get a chunk of meat, and roll it into a meatball shape.
Repeat this process until you’ve used up all meat.
Now into a large skillet over medium-low heat, add the oil and let it heat up for 2 minutes.
Once oil has heat up, add the meatballs, and let them fry for 3 minutes each side.
After this indicated time, take them out of the skillet and drain them on paper towels.
Now into a large saucepan, add a drizzle of oil and the diced onion, then stir it until golden brown. Add the diced tomato, the beef stock powder, the salt, and mix it all together very well until all ingredients combine.
Add the hot water and stir for about 2 minutes.
Once this is done, add the meatballs, slightly mix it all together and let it cook for about 5 minutes.
Transfer it to a glass baking dish and pour the sauce all over it.
Top it with parsley to taste.
