Start by poking holes all over the potatoes using a fork and transfer these potatoes to a baking sheet lined with aluminum foil.
Add a drizzle of olive oil over each potato, spread it well, add one pinch of salt, take them to a preheated oven at 400°F and let them bake for 40 minutes.
After this indicated time, cut off just the top of each potato, scoop out all the flesh just like shown in the video and set aside.
Transfer this cooked flesh to a medium bowl and add the butter, the table cream, the spice mix, chives to taste, the fried bacon bits, the grated mozzarella and mix very well until incorporated.
Once you’ve done that, stuff the potatoes with this mixture.
Wrap the potatoes with bacon strips and secure them with toothpicks.
Brush the bacon strips with melted butter.
Take the potatoes to a preheated oven at 200°C (400°F) and let them bake for 15 minutes.
Next, brush these potatoes with barbecue sauce and top each of them with the grated cheddar cheese.
Take them back to the oven and let them bake for another 5 minutes.
Finish by topping each potato with one tablespoon of Brazilian cream cheese, fried bacon bits to taste and chives to taste.
Serve.
