
Sauce
Start by placing two wooden skewers alongside the potato and make shallow slices across it using the skewers to avoid cutting the potato all the way through.
Then turn it over and slice it the same way.
Repeat this process with 3 more potatoes.
In a medium bowl, add the wheat flour.
Season with the salt, the black pepper, the garlic powder, the onion powder and mix to combine.
Then, coat the potatoes in this mixture.
In a large skillet over medium to low heat, add enough vegetable oil to cover the bottom and let it heat up.
Add the potatoes we prepared and, using a spoon, baste them with the hot oil until golden brown.
In another large skillet over medium to low heat, add the butter and stir until it melts.
Add the wheat flour and stir until it turns into a smooth mixture.
Then, gradually add the milk and keep stirring until it becomes a smooth, creamy mixture.
Season with the salt, the black pepper, the nutmeg and stir to combine.
Add the grated Parmesan cheese, the slices of cheddar cheese and stir until the cheeses are fully melted.
Then transfer half of this sauce to a medium baking dish.
Add the fried potatoes we prepared and the other half of the sauce.
Cover with the grated cheddar cheese and the smoked bacon chopped into smaller pieces.
Place it in a preheated oven at 200° C (400° F) and bake for 20 minutes.
Serve.
