Start by cutting the previously peeled potatoes, cut them in half then into smaller pieces.
Transfer the potatoes to a saucepan with boiling water and let them cook for 10 minutes.
After this time, turn off the heat and drain the water.
Into a large bowl, process the potatoes into a mash.
Add the salt, the parmesan cheese, and the cornstarch, mix it all together very well until combined. If you prefer, you can use your hands to better mix it, until a dough is formed.
Now, into a Zip Lock bag, put half of the dough. Seal the bag, squeezing out all the air, and thoroughly push the dough down to flatten it.
If you want, you can use a rolling pin to make this flattening process easier.
Now, cut the sides of the bag - make sure you don’t break down the dough.
With a knife, cut the dough into thin strips.
Then into a large skillet, add enough oil to cover its bottom.
Once oil is hot enough, add the potato strips, one by one, and let them fry until browned, for about 2 minutes each side.
Drain them on paper towels and serve.
