
For Breading
Start by dipping the chicken breast fillets in cold water.
Then transfer them to a cutting board and cut them in half.
In a medium bowl, add the grated mozzarella cheese, parsley to taste and mix everything very well.
Over each chicken fillet we cut, add 1 teaspoon of unsalted butter and spread it out.
Next, add one tablespoon of the cheese and parsley mixture and close it by shaping it into a triangle.
Repeat this process with all the chicken fillets.
In a medium bowl, add the breadcrumbs, the grated Parmesan cheese and mix everything very well.
Now, bread the chicken fillets we prepared by first dipping them in beaten eggs then coat them in the breadcrumb mixture.
Transfer them to a large baking tray and spray olive oil over all of them.
Take to a preheated oven at 180° C (350° F) and bake for 40 minutes.
Serve.
