Chicken Salami

Start by cleaning the chicken thighs, removing all the skin and bones, chop the chicken into smaller bits by crushing them with a knife.Also cut the chicken breast into small cubes then crush well with a knife.Transfer all the crushed chicken thigh and the chicken breast to a bowl, season with the chimichurri, the salt and the black pepper, add the crushed garlic cloves.Add the chicken stock powder previously dissolved in 150ml of water.Mix all the ingredients very well.Cover the bowl with plastic wrap and leave in the fridge for 6 hours.After this indicated time, get a sheet of food wrap for baking and put half of the mixture on its center. Roll it in the shape of a log, wrapping it up, tie a string at both ends and also tie a string across the center of the mixture, just like shown in the video.Cut the excess plastic and set aside.Now get another sheet of food wrap for baking, sprinkle some sweet paprika to taste and repeat the process to make another wrap.Also roll it into a log.After that, transfer both chicken wraps to a saucepan, add enough water to fully cover them and bring to a boil over medium heat, let them cook for about 1 hour.Unwrap and serve.

  • Sweet Paprika to Taste
