Cheesecake with Wafer Crust

Start by crushing the wafer cookies in a food processor then transfer all these cookie crumbs to a removable-bottom cake pan lined with nonstick baking paper.Make an even layer by pressing these cookie crumbs into the bottom of the pan.Now, in a bowl, add the cream cheese and the condensed milk, mix them together very well until combined.In another bowl, add the heavy cream and using an electric mixer, beat well until stiff peaks form.Once you’ve done that, pour all this whipped cream into the cream cheese mixture, mix very well until combined and set aside.In a small bowl, add the unflavored gelatin powder, add the water and the juice of 2 limes, mix all the ingredients together very well until combined.Microwave at maximum power for 15 seconds and mix until fully melted.Next, transfer 2 tablespoons of the cream to the bowl with the gelatin and mix until combined, just like shown in the video.Then transfer it back to the bowl with the rest of the cream and mix until incorporated.Finally, pour all this cream into the cake pan with the cookie base and spread it out evenly.Take it to the fridge and let it chill for at least 12 hours.After this indicated time, unmold it.Finish with blueberries and mint leaves.Serve.
