Bacon-Wrapped Pineapple

Start by cutting off the crown of the pineapple and set aside.Next, remove the core and all the skin.Now, on some plastic wrap, place the bacon strips, braiding it into a blanket.Once you’ve done that, wrap the pineapple in this bacon blanket, transfer it to a baking tin lined with nonstick baking paper and remove the plastic wrap.Insert a piece of seasoned pork fillet into the center of the pineapple.Place the pineapple crown on top of it and insert the barbecue sticks to secure it.Take it to a preheated oven at 180°C (350°F) and bake for 1 hour and 15 minutes.After this indicated time, brush some barbecue sauce all over the bacon.Take it back to the oven for another 20 minutes until golden brown.Serve.
